Between 2011 and 2012, thieves made off with $18 million worth of maple syrup from Quebec’s strategic syrup reserve, sneaking syrup out of barrels and replacing it with water. It was an inside job that revealed the complexity and high stakes of Canada’s maple syrup industry, which is tightly regulated to protect prices and local producers.
