The Pat Kenny Show on News Talk. Garret Mullins is with me now, executive chef at Amantara, the marker hotel and at Forbes Street Restaurant. Co-host with Garri O'Hallam of the Dishing It Out podcast. And you've got food fit for a Trump. We do, yeah, we have a couple of real American recipes here. For some I'm going to do was crispy chicken wings where craws are blue. That's a little bit of an order to snout to this one with a craws your blue, crème fraiche. So chicken wings are quintessentially the most American dish, I think you can, especially when you're over there. So this one, we're going to cook them in the oven. You need 16 jumbo wings that I want you to join. So you're just going to split the smaller piece away from the bigger piece, the butter will happily do it after you. The seasoning is quite important. So it's three tablespoons of plain flour, a teaspoon of bacon powder, which is the magic ingredient here. That's what makes it go nice and crispy. A teaspoon of smoked paprika, half a teaspoon of cayenne, teaspoon of onion powder and a teaspoon of salt and black pepper.

Mix all that together. Toss the wings in there, leave it for about 15 minutes. And then you're going to lay those wings out onto your tray that goes into the oven like your grill tray. So they're elevated up off the tray, pre-heat your oven to 180 degrees, pop them in there for about 30 to 25 minutes. They go super crispy, really delicious. Oil off the serve them with a crawsier blue cheese crème fraiche. That's 100 grams of crawsier blue, 100 grams of crème fraiche, good squeeze, a little bit of salt and pepper. You don't need too much salt because the cheese obviously does the hard work there. And a little bit of celery that you peel, cut it into buttons, pop it into a used water. That's make sure that it's nice and crunchy, a classic American chicken wing. Okay, now you want to make a burger, but not a beef burger. Now, we're moving away from the beef burger this time. I'm doing an occasion buttermilk chicken burger with crispy slaw and ranch sauce. So all the American classics here. So a chicken toys, and I know a lot of people aren't crazy on chicken toy, but they really hold much more flavor. You need 200 mills of buttermilk and a couple of cloves of garlic.

Marinate chicken toys for four or four hours in the buttermilk. And the garlic, what happens here is the acidity in the buttermilk actually tender as the chicken. Then we need a seasoning. So this time we have 200 grams of flour, teaspoon of smoked paprika, teaspoon of droid oregano, quarter of a teaspoon of cayenne, salt and pepper, and again, some of that onion powder. All you're going to do is marinate your chicken, then you'd red your chicken, true that season flour, and then it goes into a fat fryer. So it is American right. So you're calling the really neat to deep fryer. It is such a fat fryer. Yeah, air fryer. Nothing. You can do it on an air fryer. If you're doing it on an air fryer, put a little bit of piece of parchment paper on the bottom. And I drizzle it with a little bit of oil. Then sit them in and drizzle it with a little bit of... You need the oil you see to get the flour coating, to go nice and crispy. Or if you haven't got a fat fryer, you can do it in a little small pan or a wood-based pan. Build an inch of oil in a shallow fryer. For the country or the crunchy slaw, half a head of cabbage, couple of carrots, grated, one onion, finely sliced,

some mayonnaise, salt and pepper, and very quickly the ranch. 200 mills of mayonnaise, 200 mills of sour cream, clove of garlic, a bit of parsley and chopped dill, some lemon juice and tomato ketchup. They're all the American classics. The recipes you'll find me instant. Why did they call it ranch, do you know? I'm not really sure. I'm sure it's something got to do with... A cowboy. Yeah, it has to be got to do with a cowboy that's mostly... Certainly not the Indians are not thinking. So anyway, what do we do? So... Yeah, so all we're doing... So to cook the chicken, as I said, you're going to shallow fry them. You've made the slaw, you've made the ranch. Pick up a couple of burger buns. When you're after you've cooked the chicken, you have to cook a choice. So you enter the faffrore to blanch, then take it out, or you'll attempt to rip it up to 180 and cook it again. And then all you do is house-chair buns, smeared the ranch dressing on either side. Plenty of that slaw and then the crispy cheese and chicken. This is real proper weekend, cooking for me. And I definitely give it a go if you don't... If you're sick of watching Trump, at least you're going to eat a spilled soul.

Well, he's actually speaking at the moment in deer field in the Phoenix Park and we'll be reporting on the rest of his activities as the day goes on. And then he heads down to Dune Bag and we were just wondering where all the lads staying. On which 3,000 people?
