Killer CrumbleĀ
Serves 4ā6Ā
600 gā800 g poached fruit (use whateverās in season ā apples, pears, quinces or stonefruit such as peaches, nectarines or plums all work well)Ā

CRUMBLE TOPPINGĀ Ā
100 g crisp amaretti biscuitsĀ
150 g plain flourĀ
80 g caster sugarĀ
80 g light muscovado sugarĀ
1/4 cup rolled oatsĀ
150 g butter, meltedĀ
Ā Ā
For the crumble topping, put the amaretti biscuits in a snapback bag and bash with the rolling pin until finely crushed (or pulse them briefly in a food processor), then tip into a medium bowl and stir in the flour, sugars and rolled oats. Add the butter and combine with the dry ingredients to form a crumble.Ā Ā
Spoon the poached fruit out over the base of a medium-sized baking dish, scatter over the crumble topping and bake in the oven for 20ā25 minutes, or until golden and bubbling. Serve warm with vanilla ice cream or whipped cream.Ā
