It's time for a recipe of the day. If you have a little free time on the weekend, you know, I have teenagers sometimes they sleep in a little bit and the house is quiet and I have a little meantime I can spend that in the kitchen and make a really delicious sauce and take that time to maybe experiment a little bit. So the recipe that I'm going to be giving you in a moment calls for some seasonings it's got. Spongebob pre-gad chili powder, garlic powder, onion powder and a pinch of cloves in there. There's some hot sauce, Worcestershire and some cayenne, so there's lots of stuff going on. But what you could do is take this time to try a new seasoning. I got some sumac recently and I've been playing around with that. It would be wonderful to try that in here or you could toast up your own cumin and coriander seeds. I was talking about that garam masala where you could toast up the seeds, toast those up and grind them up in a spice grinder, mortar and pestle and add those to here maybe some fennel seeds. So, you can try new flavors, try new spices and take that time to make this delicious
sauce. So you're playing in the kitchen, you're having fun, you're trying something new and then you've got it in a jar in the fridge. So when it's time to make those chicken breasts on the grill later in the week you get to use your sauce and make that just a little bit more fun for you, you know. Okay, so there are lots of options here but I'm going to give you the recipe as it was written. It is called sweet spicy smoky barbecue sauce and it is delicious. We're going to start by combining a bunch of stuff in a medium saucepan. It is a cup of ketchup, a half cup of cider vinegar, a half cup of molasses, a half cup of packed light brown sugar. So you're already seeing the tangy and the sweet here, the vinegar and then the molasses and the sugar, right? And now the smoky comes in with three tablespoons of smoked paprika, two teaspoons of chili powder, two teaspoons of garlic powder, two teaspoons of onion powder, that pinch of clove so you get that kind of like warm spice in there. A teaspoon of hot sauce, a so-so, Tabasco or you could do sriracha or like if you had some new interesting hot sauce you wanted to try that could go in here.
I'm thinking like, harissa would be wonderful. Okay, and then a teaspoon of Worcestershire sauce and then you can add a little bit more heat if you want with some cayenne pepper and eight to a quarter teaspoon and then you're going to stir that all up and give it a taste. We're not done yet but you can add a little bit of salt at this point just depending on how much you think it needs. You know, ketchup has salt in it, there's a lot of flavors going on so I haven't given the exact amount of salt here. Okay, once you've stirred that all up, you are going to put it over medium heat and stirring often you're bringing it up to a simmer and then you're going to drop down the heat a little bit so it's just bubbling a little bit and cook it for five minutes stirring occasionally. Give it another taste at this point and see if it needs more salt and then set it aside to cool, transfer it to that jar in the fridge and you've spent some time cooking on your own making a delicious sauce, playing with those flavors and you're going to have it to add to whatever quick and easy things you have on your meal plan in the week ahead. You see what I mean? It is going to be fun and delicious too.
