Sourdough Feeding and Baking Schedules

I thought that sourdough would be a hassle because most recipes have many steps spaced hours or days apart. It seemed ridged, like I would fail if I didn’t follow directions exactly. As many of you know by now, I don’t like following directions at all! I like making my own. After learning the in’s and out’s I found that sourdough was much more flexible than I thought, and a lot of variance in recipes depend on your materials and environment.
