Thank you for joining us for another episode of the Low Carb MD Podcast. Scott Parker is the co-auther—along with Eric Westman—of the cookbook, End Your Carb Confusion. He started cooking at the age of 15 in his step-dad's pub in Oxford, England. He is a two Michelin-starred chef trained at the prestigious Westminster Kingsway College in London. After Scott left cooking in professional kitchens behind at age twenty-six, he devoted his life to maintaining a healthy lifestyle and developing foods for some of the world's best retailers. After a health scare in 2020, he redoubled his efforts to take good care of his body, which led to his meeting Dr. Eric Westman and learning about the low-carb philosophy of eating.
In their conversation, Brian, Tro, and Scott talk about the usage of seed/vegetables oils in the restaurant industry, Scott's philanthropic and charitable work, how Scott met and became involved with Dr. Eric Westman, Scott's introduction to the low-carb diet, how certain macro-nutrient combinations effect the release of hunger and satiety hormones, and Scott's cookbook.
