RecipeÂ
Ingredients Â
2 finely chopped carrotsÂ
2 x capsicum, de-seeded and dicedÂ
1 onion, finely choppedÂ
garlic clove x 1Â
1 tsp sweet paprikaÂ
1 tbs of - - THE MYSTERY INGREDIENT: Mexican spice mix!! (Whuuut?? Does this exist. Answer: yup.)Â
1 finely chopped sweet potatoÂ
1 tin chopped tomatoesÂ
2 tins drained and rinsed black beansÂ
1 stock cubeÂ

MethodÂ
Sauté onion, carrots, and capsicum. Add garlic, paprika and Mexican spice mix and cook for two minutes, stirring. Add in tomatoes, beans, sweet potato and capsicum and cook for 15 - 20 mins. Finish with a tablespoon of butter Â
Optional, to serve: Coriander, sour cream, Greek "yoghurt", guacamole.Â
