It's her go-to for lamb, and she's shared it through her writing for places like the San Francisco Chronicle and King Arthur Baking. Prep is straight forward, butterfly a three to four-pound boneless leg of lamb, to even thickness, trim excess fat but keeps some for basting.

Salted heavy, rub on all the spice mix, drizzle three tablespoons extra virgin olive oil, and marinate overnight or up to two days in the fridge. Pull it out an hour or two before grilling to hit room temp, then slice thin after cooking.
